We quickly crafted this as a celebratory drink to fend off the dark of the impending winter solstice. A gently bitter blend of Byrrh meets the brittle iciness of Génépy. Incendia's smoky warmth knits everything together without imparting too much fruit.

  • 1 1/2 oz Byrrh
  • 1 1/2 oz Neversink Apple Aperitif
  • 1/2 oz Dolin Génépy
  • 2 dashes Incendia
  1. Combine the Byrrh, Apple Aperitif, Génépy, and bitters in a cocktail shaker over ice.
  2. Stir gently.
  3. Strain into a rocks glass and drink while celebrating your wins and forgetting your losses.
